  1. Preheat the oven to gas 6 / 200C / 400F and line a baking sheet with parchment paper.
  2. Mix the flour, xanthan gum, cayenne / mustard powder and salt in a bowl.
  3. Rub in the margarine until the mixture resembles breadcrumbs.
  4. Add the cheese, spring onion and milk and form a soft dough.
  5. Pat the dough out on a floured surface to 1 inch thick.
  6. Use a 5cm cookie cutter to cut rounds. Reshape the dough as required and cut as many rounds as you can. I get 8, forming the last by hand.
  7. Place on the baking tray an inch apart, brush with some extra milk and sprinkle with some extra cheese.
  8. Bake for 12 - 15 minutes.
  9. Let cool a little then split and spread with Violife cream cheese style spread and a slice of ham.
